OK, I'm asking for this but... what is the best % of max heart rate to burn fat ?

Any. Or do you mean to train your body to burn fat as a fuel, in a similar way to a stage racer?

It's supposed to be 70% of max, or so that you can just manage to talk as you ride along. It used to work when I was younger but it's a total failure for a 55 year old who's given up pipe smoking.
